3 cups chopped cooked chicken or turkey
8 oz. water chestnuts, sliced
1 cup chopped celery
1/2 cup rice, cooked and drained
3/4 cup mayonnaise
1/4 cup chopped onion
2 tbsp. fresh lemon juice
3 hard boiled eggs, peeled and chopped
1 can cream of chicken soup
1 cup crushed cornflakes
2 tbsp. melted, unsalted butter
1/3 cup sliced almonds
salt and pepper to taste

Directions:
Directions:
Preheat oven to 350º. Mix all ingredients except cornflakes, butter and almonds in large bowl and stir until well blended. Put into a 9 x 13 greased casserole dish. Mix cornflakes and butter together and spread over top of dish. Sprinkle almonds over cornflakes. Bake for 35-45 minutes.
