3 bell peppers, Red, Orange and Yellow
1 whole bulb of garlic, top sliced off to expose cloves
olive oil
salt and pepper

Preheat oven to 450º

Place bulb of garlic in glass ramekin, pour oil over top just to cover, sprinkle with salt, cover tightly with aluminum foil. Bake in oven approximately 30 minutes. Allow to cool. Press garlic out of cloves into bowl and lightly mash.

Brush aluminum baking sheet with small amount of olive oil.

Place whole peppers on sheet. Roast for 15 minutes and turn. Roast another 10-15 minutes until brown and blistered.
Place whole peppers in brown paper bag. Allow to cool.
Remove skin, stem, core and seeds. Cut into strips.

Mix peppers and garlic together, sprinkle lightly with salt if desired. Cover. This mixture will keep in refrigerator for 1 week or freeze in Ziploc bag for future use.
