1 pkg. Cranberry Quick bread mix
1/2 cup chopped apricots
1 cup water
1 egg

Apricot butter:
1/2 cup unsalted, softened butter
1/4 cup apricot preserves

Directions:
Directions:
Preheat oven to 350º. Grease and flour bottom only of a loaf pan. In a large bowl, combine all ingredients and stir just until moistened. Do not over mix. Pour into pan and bake for 45-55 minutes, until toothpick inserted in the middle comes out clean. Turn out on rack and cool. Slice and serve with apricot butter.

To make apricot butter, combine softened butter and apricot preserves until light and fluffy.
