6 chicken drumsticks OR 2 lbs. drumettes
Marinade:
4 cloves of minced garlic
4 tbsp. sambal oelek or Asian chili pepper sauce
1 1/2 tbsp. maple syrup or agave
2 tbsp. soy sauce
2 tbsp. mayonnaise
3 tbsp rice wine vinegar

Salt and pepper to taste
1 lime cut into wedges

Combine marinade ingredients in zip-loc bag and blend well. Add chicken pieces. Marinate for at least 3 hours or overnight.

Preheat oven to 425º

Let chicken and marinade stand at room temperature for 30 minutes.
Line baking dish with aluminum foil. Arrange chicken and sprinkle with salt and pepper.
Bake chicken 40-50 minutes. Baste with marinade every 10 minutes. Turn chicken over after 20 minutes and baste. Continue to baste and cook until chicken is brown and skin begins to blister. Broil if necessary for 2 minutes.

The drumettes make great party food. The drumsticks are good for an easy dinner for two.
These are nice and spicy so adjust the chili sauce to your taste and your guests. Make sure you have lots of napkins as they are good and messy.
