Wendy's Macaroni and Cheese Recipe

8 oz. Kraft sharp cheddar cheese
12 oz. elbow macaroni, cooked and drained
1 stick of butter
6 T flour
1/2 t salt
2 1/2 c. whole milk

Directions:
Cut cheese into two pieces. Keeping the pieces separate, cut each piece into 1/2 inch cubes. Place the drained macaroni in a greased baking dish. Mix 1/2 of the cheese with the macaroni.
Melt butter Mix flour, and salt and stir into butter cooking until bubbling.
Slowly add milk while stirring. Cook until thickened. Pour the sauce onto the mixture -MAKING SURE TO RESERVE ONE CUP. Shred the remaining half of the cheese into the white sauce heating it until the cheese melts. Add this to the macaroni mixture. Bake covered at 400º for 25 minutes; then uncover and cook 15 more minutes.

When Sara was very little, her best friend was Jennie McGill. The girls would often play at each other's house after Kindergarten ended in the morning. One cold winter day, Sara went to Jennie's house where her mother, Wendy, served this. Sara (who rarely raved about food), said this was the best macaroni and cheese she had ever had. Apparently it was better than the Kraft boxed which was what I usually made. I made the dish for her, but it did not elicit the same reaction. I think, like so many other meals, the company and the day are what make the dish so special.
