1 Tbsp Olive Oil
1 Small onion, diced
2 Cups frozen mixed vegetable blend
1 Can vegetable broth
1/4 Cup water
1 tsp Dried thyme
2 Cups Minute Brown Rice, uncooked
1/4 tsp Sat
1/4 tsp black pepper
Pinch Cayenne pepper

Directions:
Directions:
Saute onions in oil until soft ( 2 or 3 min ).
Add vegetables, pumpkin, broth, water & thyme.
Bring to a boil, stirring occasionally. Stir in rice, salt, peppers; bring to a boil.
Cover reduce heat to low for 5 minutes.
Remove from heat; let stand for 10 minutes or until liquid is absorrbed.
Fluf with a fork & serve.
