6 eggs, beaten
2 one pound large curd cottage cheese containers, drained
1/2 lb. brick white cheese
1/2 lb. American cheese
8 T flour
1 stick of butter
1 package of boxed spinach, thawed and drained

Directions:
Directions:
Cube cheese and butter. Mix with spinach. Sprinkle on the flour and mix.
Add eggs and pour into a greased 9x13 pan. Bake one hour at 350º

The white cheese can be of any mild variety. Velveeta is best for the American cheese

This recipe came from Lela Morton who taught with me at Rose Acres Elementary School. It was one of the first meatless dish recipes I had besides macaroni and cheese. Lela brought this dish over to me when I was home after delivering my first child, Sara. This tastes good the next day. It does not freeze well.
