4-6 boneless chicken thighs cubed
salmon cubed uncooked
15 shrimp uncooked cut in half
dried chorizo sausage or hot Italian sausage

3 stalks celery, chopped
1 onion, diced
1 red pepper, diced
3 cloves garlic, pressed
1 large can Alymer diced tomatoes
3 cups chicken broth
1 1/2 cups long grain uncooked rice
1 bay leaf
1 Tablespoon Cajun seasonings

Use a very large frying pan

Fry chicken until almost cooked through. Drain and set aside. Fry sausage if Italian.
In a large skillet combine the celery, onion, bell pepper, garlic, tomatoes, broth, rice, bay leaf and seasoning. Mix well and bring to a boil then turn down to low high heat and cover.
Add chicken & sausage. Cover and simmer until rice is tender, about 30-40 minutes. Then add salmon, shrimp and cook for another 10 minutes or until rice is cooked.
