1 qt. cucumber, unpeeled & cubed
1 qt. pickling onions (tiny)
1 head cauliflower, broken apart
1 red pepper, chopped
1/2 c. salt
4 c. vinegar
2 c. brown sugar
1/4 t. tumeric
1 T. pickling spice
2 sticks whole cinnamon
6 whole cloves
1 t. mustard seed

Directions:
Directions:
Combine the four vegetables and sprinkle with salt. Cover with cold water and let stand overnight. Drain; rinse in fresh water and drain thoroughly. Combine vinegar, sugar, tumeric in large enamel kettle. Tie spices in small bag and add. Bring to a boil on medium heat. Cook 10 minutes, then add vegetables. Bring again to a boil; cook 5 minutes. Put in hot jars, process in boiling water bath 10 minutes. 3 pints
