12 red peppers
12 green peppers
15 tallow onions

Cider vinegar
Sugar
3 tbsp. mustard seed

Directions:

Grind together peppers and onion. A food processor will make the mix too small. Pour boiling water over the pepper / onion mixture and let stand for 5 min. Drain using colander.

Bring 2 c. water and1c. vinegar to a boil along with the pepper mix. Let boil up one time. Set aside for 10 min. Drain.

While pepper/onion mix drains, bring 1 pint of vinegar, 3 c. of sugar, and mustard seed to a boil.

Add peppers and boil hard for 3 min.

Seal into sterilized jars, I use half pints or pints. If lids are hot along with pepper mix, a water bath is not necessary. Jars will seal on their own.
