1 1/2 dozen pimiento peppers, deep red color
Salt
Cooking oil, Mazola, or canola

1 qt. water
1 qt. cider vinegar
3 c. sugar

Directions:
Directions:
Cut peppers into thin strips and pack into jars. I use jelly jars, as these are usually used in soups, stews, and you only need several tablespoons at a time.

Add 1 tsp. of salt and 1 tsp. of oil to each jar.

Boil water, vinegar and sugar until sugar dissolves. Pour over peppers in jar. Adjust lids and process in water bath for 30 minutes.

My mother made these for years. Really good in various recipes. Difficult part is finding pimiento peppers!
