1/2 lb bacon, dice
1 tsp garlic, chopped
1/8 tsp cayenne (or to taste)
1 lb. smoked sausage (sliced 3/4" thick)
1 C each onion, celery, green pepper, red pepper, diced
1/2 tsp each pepper, thyme, oregano
8 C chicken broth
1 lb fish (one inch cubes) or shrimp

Directions:
Directions:
Saute bacon and reserve. Heat bacon fat till it begins to smoke, then add an equal amount of flour. Whisk till mixture (roux) turn the color of a brown paper bag. Add onion, celery, green and red peppers, garlic, cayenne, pepper, thyme, oregano, the reserved bacon and chicken broth. Cook gently for 15 minutes. Add smoke sausage and fish. Simmer gently for 7 minutes. Season with salt and pepper and serve garnished with cooked white rice.
