3 medium ripe avocados
3 tablespoons lemon juice
½ tsp garlic salt
½ tsp black pepper
1 c. mayonnaise
1 c. sour cream
2 cans black beans, drained, rinsed and mashed
1 pkg taco seasoning
1 cup chopped green onions (green and white parts)
3 tomatoes, coarsely chopped
2 cans (3.5 ounces) pitted olives chopped or green chiles
8 oz. shredded sharp cheddar

Directions:

Peel, pit and mash avocados with lemon juice, garlic salt and pepper. Combine sour cream, mayo and taco seasoning.

To assemble: Spread mashed black beans on the bottom of a 9x13 pan. Then layer the avocado mixture on top. Sprinkle with veggies and top with cheese. Chill and serve with corn chips.
