Racks of pork ribs, enough to feed your group.
Onions, cut into thin slices
lemons cut into thin slices

Sauce:
1 c. ketchup
several dashes of Tobasco sauce
2 c. water

Directions:
Directions:
Cut ribs into serving pieces. Top each piece with a slice of onion, topped with a slice of lemon. Secure with a toothpick.
Place in shallow pan. Roast in 450º oven for 30 minutes. Drain off fat.
While roast, mix sauce ingredients and bring to boil.

Pour sauce of ribs after fat is poured off. Put back in oven at 350º until tender.

This is the recipe that mother used for years. (Lorene Elford). Not at all spice, like many would prefer. However, the onion / lemon slices is a great idea and adds terrific flavor.
