Makes 2 loaves
Blend:
1 C. salad oil
2 C. sugar
Beat 3 eggs (one at a time)
2 C. grated raw zucchini squash

In another bowl, sift together:
3 C flour
3 tsp cinnamon, leveled
1 tsp baking soda
1/2 tsp baking powder
1/4 C chopped nuts (if desired)

Directions:

Heat oven to 325º
Add first mixture to dry ingredients and mix thoroughly. Pour into two greased/floured 8 1/2 x 4 1/2 baking pans. Bake for 1 hour and 5-10 minutes. Check to make sure it is done in the center of the bread.
