6 c. unsifted flour
1 c. whole bran cereal
1 c. packed brown sugar
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 pkgs. of active dry yeast
1/2 c. milk
1/2 c. water
1/3 c. margarine
1 c. applesauce (room temperature)
2 eggs at room temperature
1 c. chopped walnuts

Mix 1. cup of flour, cereal, brown sugar, salt, baking soda, cinnamon and un-dissolved yeast. Heat milk, water and margarine to 120 - 130º. Add to dry ingredients and beat 2 minutes at medium speed. m Add applesauce, eggs and 1 c. flour. Beat at high speed 2 minutes. Stir in walnuts and enough flour to make a soft dough. Cover, let rise in warm place until doubled, about 1 hr.
Stir batter down, divide equally between 2 well-greased 1 1/2 qt. casserole dishes. Cover, let rise until doubled.
Bake at 350º for 35 minutes or until done. Remove from casseroles and cool on rack.

Found this years ago on package of yeast. Very good, moist, high fiber.
