Ingredients: 2 c. (16 oz.) sour cream 1 can (16 oz.) refried beans 1 can (4 oz.) chopped green chilies (or jalapenos, depending on how hot you like it) 1 envelope Fiesta Ranch Dip Mix * 2 c. shredded Mexican cheese blend, divided
Garnish/Toppings (Optional): - Sliced black olives - Chopped tomato - Sliced green onions - Shredded lettuce

Directions:In a shallow 1 1/12 qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 c. cheese. Cover and microwave on high for 3 minutes. Stir. Cover and microwave additional 2 minutes or until heated through. Sprinkle with remaining cheese. ** Top with optional garnish if desired. Serve with tortillas.
* Fiesta Dip Ranch Mix - hard to find or Hidden Valley doesn't make it anymore. Substitute one pkg. of regular Ranch Dip Mix and part of a taco seasoning package.
** This dip is very good cold if you have leftovers - but the toppings put on as garnish do not do well for any length of time in the refrigerator or being warmed up. Leave off if you know the dip won't be completely eaten at time of 1st serving. |
