1-300 g pkg frozen chopped spinach, well drained ( I have also used fresh spinach, about 3 cups)
1- 500 g container low-fat cottage cheese
1 cup shredded mozzarella cheese, divided
1 red pepper, finely chopped
1 egg white
1 tsp dried oregano leaves
20 jumbo pasta shells cooked, drained and cooled (I cook the whole pkg in case some break; don't over-cook; keep firm)
1-700 ml jar pasta sauce

Directions:
Directions:
Heat oven to 400º. Mix spinach, cottage cheese, 1/2 cup mozzarella, red pepper, egg white and oregano until well blended. Spoon into shells; approx 1 heaping Tbsp each.

Spread half the sauce on to bottom of 13x9" pan. Arrange shells, filled side up, in baking dish. Top with remaining sauce and mozzarella. Cover with foil.

Bake 40 minutes or until heated through, removing foil after 30 min.

This is a great recipe for vegetarians, but if you have meat-lovers like Mark, just add some ground beef that has been cooked and well-drained to the spinach mix and you have a meal that everyone likes!
