2 1/2 lb. Round Roast
2 stalks celery cut into big chunks
10-12 baby carrots
4 smashed garlic cloves
1 pkg. dry onion soup mix
1 can reduced fat cream of mushroom soup
1/2 can water
1/2 can red wine
1 tsp. Worcestershire
Italian Seasoning

Remove excess fat from roast. Sear roast on all sides in skillet over medium-high heat.
In crock pot place celery, carrots and garlic to cover bottom. Place roast on top of vegetable bed. Pour dry onion mix over roast and massage in. Mix canned soup, water, wine and Worcestershire and pour over roast. Sprinkle with Italian Seasoning or other seasoning you prefer. Do not salt at this point wait to taste after cooking for awhile.
Roast for 10-12 hours on low, 5-8 hours on high.
Check after roasting a few hours, turn over and taste gravy and adjust seasoning, add more water or wine if necessary to keep roast almost covered.

This recipe is so perfect for cold winter nights. Simply put everything in the crock pot in the morning and by dinner time you have a nice pot roast and lots of yummy gravy. I have even started it before going to bed and then checked the seasoning and cooking time in the morning. I like to serve it with smashed or mashed potatoes and sautéed mushrooms, shallots and peas.
