Ingredients:  
1 Family-size Box chicken Flavored Rice-a-Roni; cooked as box directs.
1/2 c chopped Spanish style pimento olives.
1/2 finely chopped small bell pepper (red or orange is pretty).
4 finely sliced whole green onions.
1 jar marinated artichoke hearts; drained, save the juice and chopped into small pieces.
1/4 c Mayonnaise.
1/4 t. curry powder.

Directions:

Cool and fluff rice mixture.
Add all the veggies and toss.
Add the curry powder to the leftover juice from the artichoke hearts.
Mix well with the Mayo.
Toss with rice/veggie mixture. chill.

For this recipe none of the amounts matter to much so use whatever you have. Add slivered almonds to the top and sliced green onions.
Great side dish to take to a party. I double and triple it....bring copies of the recipe friends will want it.
