1 1/2 c. flour
3/4 tsp. baking powder
1/2 tsp. soda
1/8 tsp. nutmeg
3/4 c. sugar
1 tsp. vanilla
2 eggs
1 c. toasted coconut

Directions:
Directions:
Heat over to 350º.
Combine ingredients, flour through nutmeg. Beat eggs, sugar and vanilla in a small bowl. Combine wet ingredients with dry. Once mixed briefly in mixer, knead 7 or 8 times on a board. Form into a 15" x 3" roll. Should be about 1" high. Bake on a parchment covered baking sheet for 40 min.
Remove roll to a rack and cool 5 min. Slice with serrated knife into 1/2 inch slices. Place back on sheet pan and bake for another 20 min.
