1 can (10 oz.) minced clams
4 T. butter
3/4 c. flour
2 eggs
1 t. salt
1/8 t. pepper
1/8 t. thyme
1/2 t. chives (or minced onion)

Directions:
Drain clams, reserving 1/2 c. liquid. Heat butter with clam juice. As soon as it boils, pour in flour. Stir vigorously with wooden spoon over low heat until mixture leaves sides of pan and forms a smooth ball. Beat in eggs, one at a time. Add clams and seasonings. Grease baking pan. Drop batter by 1/2 t. onto pan. Bake at 400* for 20 minutes or until golden brown.
Can be frozen when cool in a plastic bag. On serving day, place frozen puffs on cookie sheet and heat at 350* for 10 - 15 minutes.
