1/2 c. un-popped popcorn kernels
1 c. salted butter
1 c. light brown sugar
1/3 c. light corn syrup
1 1/2 - 2 tsp. kosher salt (or sea salt), divided

Directions:
Directions:
Preheat oven to 300º. Line a large baking sheet with parchment paper and set aside.
Pop popcorn kernels (your favorite way) and put the popped popcorn into a large mixing bowl.
In a small saucepan melt the butter and stir in the brown sugar, corn syrup, and 1 tsp. of salt. Bring to a boil over med heat and let boil for 4 minutes, without stirring.
Pour caramel mixture over popcorn and stir to coat evenly. Transfer popcorn to lined baking sheet and sprinkle remaining salt on top (or to taste). Place in preheated oven and bake for 30 minutes, stirring every 10 minutes. Allow caramel corn to cool on parchment-lined counter.
