6 Roma tomatoes (ripe)
1 small onion
olive oil (drizzle)
fresh lime juice (to taste)
cilantro leaves (to taste)
salt (to taste)
pepper (to taste)

Directions:
Directions:
Chop tomatoes and onions into bite sized pieces and place them in a medium sized serving bowl.
Roughly chop cilantro and add to the tomatoes and onion. Drizzle the mixture with olive oil, then add lime juice to taste. Add salt and pepper.
Toss and serve.

Make sure to season, drizzle, and juice conservatively, then taste to determine if more of anything should be added. I like a lot of lime and a lot of cilantro, but experiment to see what suits your taste.

This salad is perfect to eat along side white rice, or with Mayari's Special Chilean Rice.
