1 six pound hen, cut for frying
1 tablespoon salt
1/2 Tablespoon black pepper
1/2 Tablespoon red pepper
1 cup of oil
1 large onion, minced
3 garlic cloves, minced
2 pounds of smoked sausage, cut into one-inch pieces
3 quarts water
1 bunch of green onions, chopped
1/2 cup parsley, chopped
6 cups short grain rice uncooked

Directions:
Season chicken pieces with salt and pepper. In a large black iron pot, brown chicken in oil. Add onion and garlic and cook until onions are soft. Remove chicken, onion and garlic from the pot. Add sausage to oil and brown quickly. Drain excess oil. Return chicken, onion, and garlic to the pot, add water and cover pot and cook until chicken is tender, skimming excess fat from water. (Be sure there are at least 12 cups stock in the pot.) Add onion tops, parsley and rice; bring to a rapid boil, stir and taste for seasoning. Lower heat cover and cook for 30 to 45 minutes or until rice is cooked and stock absorbed.
