3 pounds raw rice
2 1/4 pounds of lean pork
3/4 pound pork liver
1/2 pound pork heart
1/3 pound pork kidneys, optional
1/3 pound of pork spleen, optional
Water, enough to cover meat
1 Tablespoon salt
1 teaspoon black pepper
1 Tablespoon Cayenne pepper
2 bunches green onions
1 Tablespoon parsley flakes or 1/4 cup chopped fresh parsley

Directions:
Directions:
Cook the rice according to package instructions. Put all the meat in a large stockpot; add water to cover the meat completely. Add seasonings; bring the water to a hard boil for a few minutes. Stir the meat frequently so that it does not stick to the bottom of the pot. Lower to a slow boil and cook for one hour, stirring occasionally. Remove the meat from the pot and remove any bones. Grind all the meat and the green onions. Place
the rice, ground meat and green onion mix in a large mixing pan, adding parsley and enough of the seasoned water that the meat was cooked in to moisten dressing to desired consistency. Mix thoroughly. The boudin dressing is now ready to stuff in the casings, or it may be eaten as a dressing.
