3 pounds of fresh pork skin with about 1/2 inch fat on the skin

salt and red pepper

Slice pork skins in one-inch squares. Place cracklins in a heavy pot, cooking on medium heat. When the cracklins get hot, add a little water so they don't stick. Stir constantly; repeat the water process as needed to keep the cracklins from sticking. Stop adding water when about one inch of grease has accumulated. Stir often until cracklins are crispy and brown. Drain on paper towels and season freely with the salt and red pepper.
