2 Tablespoons butter
1/2 cup flour
1 onion, chopped
1 bellpepper, seeded and chopped
1 rib of celery, chopped
1/2 cup parsley, chopped
2 cups water
1 chicken, cut up
salt and pepper to taste
1 teaspoon of garlic salt

Directions:
Directions:
Make a roux with the butter and flour in a black iron pot, or use jarred roux. Just before the roux is done add onion, bell pepper and celery, cook until vegetables are wilted but don't burn the roux. Add water and stir
till the roux is evenly mixed. Add chicken, seasonings and cook about 25 minutes until chicken is done. Serve over rice.
