1 lb. Italian Sausage
1 c. coarsely chopped onions
2 garlic cloves, sliced or minced
5 c. beef broth
˝ c. water
˝ c. dry wine (or ˝ cup more water)
2 c. (4 medium) chopped peeled tomatoes
1 c. sliced carrots
˝ tsp. dried basil leaves
˝ tsp. dried oregano leaves
1 (8 ounce) can tomato sauce
1 ˝ c. sliced zucchini
8 oz. (2 cups) cheese-filled tortellini
3 Tbsp. chopped fresh parsley
1 medium green Bell pepper
1/2 c. grated parmesan cheese

Directions:
Directions:
Remove skins from sausage. Brown sausage. It’s okay if it crumbles or is a bit chunky.
Remove sausage from pan, leaving 1 Tbsp drippings in pan.
Cook onions and garlic in drippings until tender.
Add together and bring to a boil—sausage, broth, water, wine, tomatoes, carrots, basil, oregano, and tomato sauce.
Reduce heat and simmer for 30 minutes.
Skim fat from soup.
Stir in the zucchini, tortellini, parsley, and Bell pepper.
Cover and simmer an additional 20-25 minutes or until tortellini are tender.
Sprinkle each serving with parmesan cheese.
