1/2 cup butter, at room temperature
3/4 cup packed brown sugar
2 eggs
1 cup (2 or 3) mashed very ripe bananas
1/2 cup sour cream, or plain Greek yogurt
2 1/4 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
(opt.0 3/4 cup finely chopped pecans or walnuts

Cream butter & sugar together. Beat in eggs, one at a time. Add bananas & sour cream, beating until fluffy & well mixed. Sift dry ingredients together; stir into creamed mixture. Fold in the nuts. pour into a lightly buttered & floured Bundt cake pan. Bake in preheated 350º oven about 50 minutes,until golden brown. Cool 5 minutes in pan, then turn onto a wire rack to cool completely.
