7 3/4 oz. can pink salmon, drained, juice reserved
1 egg, lightly beaten
1/4 cup crushed saltines, plus more to coat patties
2 Tbsp. fresh grated onion
1 tsp. dried parsley
2 Tbsp. fresh lemon juice
1/4 tsp. black pepper
(opt.) 1/4 tsp. dry mustard
3 to 4 Tbsp. peanut oil

Directions:

Mix salmon, egg, 1/4 cup crumbs, onion, parsley, lemon juice, pepper, & dry mustard together well. Form 6 thin patties. Coat patties with cracker crumbs; set aside. Heat 3 to 4 Tbsp. peanut oil in a skillet over medium heat. Fry each patty in oil until golden on each side. Note: if mixture is too dry, add a little salmon juice or a bit of mayonnaise to mixture.
