2 1/2 cups chopped, peeled potatoes
1 cup water
1/2 cup chopped celery
1/2 cup sliced carrots
1/4 cup chopped scallions
1 tsp. dried parsley flakes
1 cube chicken bouillon
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cup milk
2 Tbsp. flour
1/2 lb. Velveeta cheese, cubed

Directions:
Directions:
Combine first 9 ingredients in a stockpot. Cover & simmer 15 minutes or until vegetables are tender. Remove pot from heat. Mash vegetables with a potato masher. In a small bowl, whisk milk & flour together; add to soup. Return pot to stove burner; cook & stir soup over low heat until thickened. Add cheese cubes; stir until melted & blended.
