2 tsp. grated lemon rind
1 1/2 lb. ground pork
1 egg
1/2 cup dry Italian seasoned bread crumbs
1 Tbsp. grated onion
2 tsp. salt, divided
2 Tbsp. butter (or more, if needed)
2 Tbsp. flour
1/4 tsp. pepper
1 cup milk
1 cup water

Directions:
Directions:
In a large bowl, combine the lemon zest, pork, egg, bread crumbs, onion, & 1 tsp. salt. Shape into 1-inch diameter meatballs. Melt butter in a hot skillet. Brown meatballs, a few at a time, on all sides (add more butter to pan, if needed). As they brown, remove meatballs to a bowl. Discard all pan drippings, except 2 Tbsp. Stir flour, pepper, & 1 tsp. salt into 2 Tbsp.drippings to make a smooth paste. Gradually stir in the milk & water. Cook over medium heat, stirring constantly, until slightly thickened. Return meatballs to the skillet & heat until sauce boils. Reduce heat to low, cover pan, & simmer 10 minutes.
