6 lbs. short ribs of beef
2 Tbsp. flour
4 tsp. salt
1/2 tsp. rosemary (powdered)
6 Tbsp. bacon drippings
1 c. onions, chipped
1 c. celery, chopped
3 c. boiling consommé
pepper to taste

Directions:
Directions:
Mix salt, pepper, rosemary and flour. Cut the ribs into serving pieces. Coat ribs with flour mixture. Heat bacon drippings in skillet. Add onion and celery and cook 5 minutes. Transfer onions and celery to heavy pot with lid.

Brown ribs in same bacon fat and add them to onions an d celery. Add boiling consommé and cover. Bake 2 1/2 hours in a 300º oven or simmer slowly on top of stove over low heat. Skim off excess fat.
