2 c. all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 c. butter, room temp or softened
1 c. granulated sugar
1 c. packed brown sugar
2 eggs
1 tsp. vanilla
2 c. rolled oats
3/4 c. chocolate chips
1/2 c. chopped pecans

Line baking pans with parchment paper. Sift flour, baking soda, baking powder, and salt together in a bowl. In another bowl, cream butter and both sugars together using a mixer. Add eggs to the creamed sugars, one at a time, mixing well after each egg. Add vanilla. Add flour mixture and mix well. Take the bowl off of the mixer and stir in the oats, chocolate chips and nuts, stirring well to combine. Drop the dough by teaspoons on baking sheets. I usually roll into balls, but make them small. Ping pong ball size or smaller is best. Bake at 350º until golden around the edges, about 11-13 minutes. Longer baking will make for crispier cookies after they cool.

Place cookies on racks to cool.

This is a recipe from my friend Lorna Gilliland, who makes these cookies for us when we visit her home. I like to place the dough in the fridge for a few hours before baking. This dough also freezes well: roll the dough into cookie-sized balls and place in a freezer-safe bag or container.
