1 t. black pepper
1 t. cayenne pepper (if you want it hot)
1 t. gumbo file powder
1 t. dry mustard
1 t. dry thyme
1/2 t. ground cumin
3 bay leaves
5 T. butter
6 oz. smoked ham, diced
6 oz. smoked sausage, diced
6 oz. Italian sausage, crumbled
2 c. chopped onions
2 c. chopped celery
2 c. chopped bell pepper
4 cloves garlic, mined
3 c. cooked rice
3 c. chicken broth
14-oz. can diced tomatoes, including liquid
1 lb. 21-25 count. shrimp, peeled and cut in half

1. In a large heavy pot, melt butter.
2. ham and sausages and cook 4-5 minutes.
3. Add onions, celery, bell pepper, garlic and seasonings.
4. Cook about 10 minutes, stirring frequently and scraping the bottom of the pot.
5. Add chicken broth and tomatoes.
6. Bring to a boil; reduce heat and simmer for 15 minutes, stirring often and scraping bottom to keep from sticking.
7. Add shrimp and rice and cook for 5 more minutes.

You can prepare through step 5 and refrigerate overnight. Then reheat and complete step 4 just before serving.
