1 lb. firm fish fillets
1/2 cup milk
1/2 cup dried fine bread crumbs, or Panko crumbs
2 Tbsp. butter, melted
salt & pepper

Directions:
Directions:
Dip fish fillets in milk, then into crumbs. Coat both sides. Place in well-seasoned iron skillet. Sprinkle with salt, pepper, & melted butter. Bake at 500º for 10 to 12 minutes, or until fish flakes easily with a fork.
