Ingredients:  
35 large shrimp deveined and split lengthwise to tail (using sharp knife), but do not sever tail
2-3" of canola oil in heavy skillet
2 C. flour
2 eggs
2 C. coconut (add more if needed)

Sauce:
1 C. apricot preserves
1/4 C. raspberry vinegar
1/4 C. sherry vinegar
1 tsp.. paprika
dash of Tabasco sauce

Directions:
Directions:
Heat oil until hot
Separate flour, eggs and coconut into three separate bowls
Whisk eggs
Roll shrimp first in flour, second in egg, third in coconut
Fry until golden brown
Serve with apricot sauce

Sauce:
Combine all sauce ingredients in a small sauce pan over medium heat for 3-4 minutes, stirring frequently. Heat until thoroughly blended. Serve warm with coconut shrimp.
