2 medium green bell peppers, halved lengthwise & seeded
1/2 lb. lean ground beef
1 cup cooked white rice
1/8 cup chopped onion, chopped small
3/4 tsp. salt
dash of pepper
15 oz. good quality tomato sauce
1/2 cup shredded Cheddar cheese

Bring a large pot of water to a boil. Blanch the pepper halves in the boiling water; drain. Place peppers, cut-side up, in a shallow pan. Set aside. Mix ground beef, cooked rice, onion, salt, pepper, & 1/2 cup tomato sauce together. Divide the beef mixture into 4 portions; pile 1 portion into each pepper. Top peppers with shredded Cheddar cheese, then remaining tomato sauce. Cover & bake 1 hour at 350º.

May substitute picante sauce for all or some of the tomato sauce, and Cheddar-Jack cheese for the Cheddar if you like spicy.
