2 (1/4 oz. each) pkts. active dry yeast
1/4 cup warm water (about 110 degrees)
1 1/2 cups buttermilk, heated to lukewarm
1/4 cup sugar
1/2 cup oil
4 1/2 cups flour
1 tsp. salt
1/2 tsp. baking soda
1/4 to 1/2 cup butter

Use a glass bowl & wooden spoon to combine the yeast & water. Let them stand for a few minutes to dissolve the yeast. Stir in the buttermilk, sugar, & oil. Next, stir in the flour, salt, & baking soda; mix well. Let stand in the bowl for 10 minutes, then roll or pat out on floured surface. Cut into rounds with a biscuit cutter. Melt the butter in a pan large enough to place biscuits side-by-side. Put rolls in pan, then turn to coat with melted butter. Let stand 30 minutes at room temperature in a draft-free place. Preheat oven to 425º. Bake the biscuits until light brown, about 10 to 12 minutes. Do not over bake.

Recipe may be halved or doubled.
May substitute 1 1/2 cups milk mixed with 1 1/2 Tbsp. lemon juice for buttermilk.
