1/4 oz. pkt. active dry yeast
1 cup plus 3 Tbsp. lukewarm water (100-115 degrees)
1/2 cup sugar
1/2 cup butter, softened
1 tsp. salt
2 eggs, beaten
4 cups flour, plus more to work into dough to make a firm dough
melted butter to brush on dough

In a large glass bowl, dissolve the yeast in warm water; set aside. Mix sugar, butter, 1 cup warm water, salt, & eggs together. Using a wooden spoon, stir the sugar mixture into the dissolved yeast. Gradually mix in 4 cups flour; stir in enough extra flour to make a slightly firm dough. It may take several cups more of flour. Cover with plastic wrap & refrigerate overnight. To make croissants, roll dough to a 1/4-inch thick circle on a lightly floured surface. Lightly brush with melted butter. Cut the circle into wedges. Roll each wedge from the large end to the point. Bend each roll slightly to form a crescent shape & place several inches apart from each other on a baking sheet that has been lightly greased, or sprayed with nonstick baking spray. Let rise in a warm draft-free place until doubled in size (about 2 hours). Bake at 350º until golden brown.
