2 cups all purpose flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 cup orange juice
3 Tbsp. butter, softened
1 egg
1 cup chopped pecans
1 cup cranberries, sliced lengthwise

Directions:
Directions:
Spray a loaf pan with nonstick cooking spray, or lightly butter the pan. Preheat the oven to 350º.
Sift the flour, sugar, baking powder, baking soda, & salt together; set aside. In a large bowl, cream the butter & egg together; gradually add the orange juice & beat until evenly mixed. Add the flour mixture; mix well. Fold in the cranberries & pecans. Pour into prepared pan. Bake 60 minutes, or until a toothpick inserted into the center of the bread comes out clean. Remove the pan from the oven. Cover the pan with a cloth towel & let set at room temperature for 24 hour before removing bread from pan.
