l lb. green beans
1 Tbsp olive oil
1 small red onion, halved lengthwise, thinly sliced
1 cup sliced mushrooms,
2 cloves garlic, thinly sliced
1 tsp dried basil - I use fresh basil
2 ripe tomatoes, diced
1 Tbsp balsamic vinegar
2 Tbsp water
1/4 tsp EACH salt and pepper

Trim ends of beans and snap into bite size pieces In a saucepan, cook the beans in boiling
water for 3 min. Drain well and set aside.
In a large skillet, heat oil over medium heat. Add onion, mushrooms, garlic and basil. Cook , stirring for 2 min.,until softened.
Stir in tomatoes, vinegar, water, salt and pepper for 3 min. or until sauce-like.
Add beans, cover, and simmer for 8-10 min, until tender. Add more water if necessary to keep mixture moist.

This recipe is a great side-dish for a BBQ supper. Later in the season, you can use canned tomatoes .I've also used it as a pasta sauce.
