1 lb Chicken finely cooked and cubed
1 lb Pork finely cooked and cubed
1 lb Ham (canned or slabbed) finely cubed
4 lb Napa Cabbage
1 bushel Green Onion
1 Onion (yellow or white)
5 ribs Celery
1 lb Bean Sprouts chopped
1 package Wanton Soup Mix (optional)
1-3 tsp Garlic Powder, depending on taste
Egg roll wrappers (the thinner the better) - 60-100 depending on roll size. Thin ones are available in the frozen food section of your Asian grocery store.
Water or egg whites for sealing

1. Lumpia mix: Cook and finely cube Chicken and Pork. Place in Plastic bag/container in refrigerator. Cube Ham and also place in refrigerator.
2. Chop up the vegetables (celery, onion, and green onion) and set aside in refrigerator.
3. Chop up the Napa Cabbage & Bean Sprouts. Add the other vegetables. Add the meats. Add spices (garlic powder, wanton soup or salt, & pepper). Mix all together.
4. For the next step it is best to roll and fry the Lumpia quickly so heat the oil for deep frying (any method) to 350º. Peanut oil works best. Then start rolling.
5. Put a tablespoon or more of the Lumpia mix into the wrapper and roll. Seal with water or egg whites. Fry until golden brown. Drain well. Serve with - Chili sauce, Plum Sauce, or Hoisin sauce.

This is a large project and is fun to do as a family or group. Since it makes so many they can easily be divided between people. They are best eaten immediately but can be frozen and rewarmed in an oven.
