2/3 c sugar
1/4 c cornstarch
1/4 tsp salt
1/3 c cocoa
2 1/2 c milk
4 large egg yolks
2 tbsp unsalted butter
1 tsp vanilla

Directions:
Directions:
In a medium saucepan, off heat, whisk the sugar, cornstarch, salt (and cocoa, if chocolate). Gradually (by tbsps) whisk in milk, dissolving cornstarch. Whisk in egg yolks.

Whisking constantly, cook over medium heat until first large bubble forms and sputters. Reduce the heat to low and cook for 1 minute and whisk. Remove from heat, pour through sieve into a bowl. Stir butter and vanilla into hot pudding.

Put plastic wrap right on the pudding (prevents skin), chill 3 hours, up to 3 days. Before serving, whisk until smooth.
