1 c whole cranberry sauce (see recipe)
1/4 c honey
2 tbsp soy sauce
2 garlic cloves, minced
1 tbsp minced, fresh gingerroot
Freshly ground black pepper (to taste)
4 salmon fillets (~175 g each)

Note: Salmon pieces should have top skin removed but the bottom skin should be kept on to keep the salmon together while baking. If you line the baking sheet with foil, the skin should adhere to the foil and the salmon can easily be served with a spatula (optional, though).

In a bowl, combine cranberry sauce, honey, soy sauce, garlic, ginger and pepper, mixing well. Arrange the salmon fillets on foil lined/lightly greased pan. Top each fillet with evenly spread cranberry mix. Bake 350º for ~10 minutes or until the salmon flakes easily when tested with a fork.
