1 whole dressed fish (3-4 lbs)
salt
butter, melted
bacon- optional

Directions:
Directions:
Scale if necessary, clean, wash and dry fish. Rub the insides and outside with salt and place fish in a greased baking pan. Brush with melted butter and lay slices of bacon over the top. Bake at 350º for 40 minutes or until flesh flakes easily when tested with a fork. Baste fish occasionally with drippings during baking. Serves six.

For stuffed baked fish, pack stuffing of choice lightly into fish cavity and secure opening. Increase baking time by 10 to 15 minutes.
