1 pound sweet sausage (buy in meat section of grocery)
1 pound ground beef
1/2 cup minced onion (chopped fine by hand or in an electric chopped)
2 garlic cloves crushed
The next 10 ingredients are for the red sauce; you can substitute ready made pasta sauce;about 8 cups needed.
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans tomato sauce
1/2 cup water
2 tablespoons sugar
1 teaspoon Italian seasonings
1and 1/2 teaspoons dried basil
1 tablespoon salt
1/4 teaspoon pepper
1 tablespoon dried or 2 T fresh chopped parsley
12 lasagna noodles (I like to buy noodles that don't require cooking before you assemble)
16 ounces ricotta or small curd cottage cheese
1 egg
1 T dried or 2T fresh chopped parsley
1/2 teaspoon salt
3/4 pound mozzarella cheese slices or grated
3/4 cup grated Parmesan cheese

In a Dutch oven (big deep heavy pan) cook sausage, beef, onion and garlic over medium heat until meat is well browned. Stir in tomato sauce ready made or 10 ingredients listed for sauce. If using ready made sauce taste and add any seasoning needed such as a can of tomato paste, tablespoon of sugar or bit of Italian season/basil to taste.
Simmer (that means barely bubbling but not really boiling) covered for 1 and 1/2 hours stirring occasionally.
Bring large pot of lightly salted water to boil. Cook lasagna noodles as directed or skip this if you bought noodles that do not require cooking.
Combine next 4 ingredients in a bowl (ricotta, egg, parsley and salt)
Preheat oven to 375
To assemble: spread 1 to 1 & 1/2 cup sauce in bottom of 13 by 9 inch baking dish. Arrange one layer of noodles over sauce, then spread ricotta cheese mixture, top with mozzarella cheese and Parmesan cheese. Repeat layers finishing the top with the mozzarella and Parmesan cheese. You will have about 3 layers when finished.
Cover with foil - to prevent sticking spray foil with Pam before covering dish. Bake in preheated oven for 25 minutes; remove foil and bake additional 25 minutes. Cool 15 minutes before serving.

Options: you can place in 2 separate containers; you can freeze the lasagna after assembled and before baking, just cover tightly in foil to freeze.
