Ingredients: 1 Lb. skinless boneless chicken breasts 1 egg 1 Tbsp. lemon juice 1 C. Flour seasoned with approx.1 tsp. each salt, pepper & garlic powder 1 stick butter Juice of 1 1/2 lemons 3 cloves garlic (or to taste) 2 tsp. parsley 1/8 tsp. pepper 1-2 C. chicken broth

Directions:Slice chicken beasts into cutlets or strips. Put chicken pieces between two sheets off plastic wrap and pound to tenderize and slightly flatten cutlets.
Wisk egg and lemon in a small bowl.
Heat 1/4 C. Canola oil with 2 Tbsp. butter in large frying pan.
Add seasoned flour to a zip-lock bag or large bowl. Shake or dredge chicken pieces in flour mixture.
Dip floured chicken pieces in egg mixture and then brown in oil/butter.
Set aside in baking dish.
For sauce: Melt together 1 stick of butter and juice of 1 1/2 lemons. Add garlic, parsley, pepper and chicken broth. Simmer 10 minutes; strain if desired. Pour over chicken in baking dish. Bake covered 40 minutes and then uncovered 15 minutes at 350 degrees.
Serve over rice. |
