1 Lb. skinless boneless chicken breasts
1 egg
1 Tbsp. lemon juice
1 C. Flour seasoned with approx.1 tsp. each salt, pepper & garlic powder
1 stick butter
Juice of 1 1/2 lemons
3 cloves garlic (or to taste)
2 tsp. parsley
1/8 tsp. pepper
1-2 C. chicken broth

Slice chicken beasts into cutlets or strips. Put chicken pieces between two sheets off plastic wrap and pound to tenderize and slightly flatten cutlets.

Wisk egg and lemon in a small bowl.

Heat 1/4 C. Canola oil with 2 Tbsp. butter in large frying pan.

Add seasoned flour to a zip-lock bag or large bowl. Shake or dredge chicken pieces in flour mixture.

Dip floured chicken pieces in egg mixture and then brown in oil/butter.

Set aside in baking dish.

For sauce: Melt together 1 stick of butter and juice of 1 1/2 lemons. Add garlic, parsley, pepper and chicken broth. Simmer 10 minutes; strain if desired. Pour over chicken in baking dish. Bake covered 40 minutes and then uncovered 15 minutes at 350 degrees.

Serve over rice.
