2 eggs, separated
1/4 cup butter, room temp
1/2 cup sugar
1/2 cup light brown sugar
1 tsp vanilla
1 cup flour
2 tsp baking powder
2 cups apple, peeled and finely chopped

Directions:
Directions:
Preheat oven to 325. Using whisk attachment, beat 2 egg whites on setting 12 until stiff. Remove from bowl and set aside. Using same bowl and flat beater, beat egg yolks, butter, sugars, and vanilla on setting 4 until mixed. Add flour, baking powder. Mix on setting 2 until blended. Add apples and beaten egg whites and stir on setting 2 until just mixed. Pour into a greased 9 in pie plate and bake for 45 minutes. Serve topped with vanilla ice cream.
